CHICKEN 2

Ingredients:

Chicken tenders, one package

One medium onion, chopped

One 14.5 oz can chopped tomatoes (with oven-roasted garlic added).

Dried sage, thyme and basil, crushed (or use other herbs to taste)

Bacon fat, olive oil, or your choice of other oil.

Directions:

Preheat oven to 350 degrees

In cast iron skillet brown chopped onions in bacon fat or other oil

Sprinkle salt & pepper & crushed herbs over tenders and carefully add on top of the layer of onions.

Add can of tomatoes.

Optional: you may want to add some water, but when I made this, it didn't need water.

Put uncovered pan in oven. Bake for about 20-25 minutes.

If you added water, you might have to serve in shallow soup bowls.

Variations:

Add chopped carrots, celery, etc. Maybe other herbs and spices.

This is one of the easiest ways to prepare tasty chicken. You can use your own brand of canned chopped tomatoes (garlic, basil, oven-roasted garlic, etc) - most manufacturers have them plain, or with other herbs added. This would work with chicken thighs, too. But whatever chicken pieces are on sale is the best way to go. Baking time will need to be lengthened, depending on how thick the chicken pieces are.
